When you first visit Thailand you might find yourself initially shocked by how mild the curry tastes. This is because all of restaurants frequented by tourists have toned down the spice in their dishes to cater to the typical tourist taste buds. Unfortunately this yields curry that just flat out tastes bad.
If you want the real thing, and you should because it is far better than the tourist stuff, you need to head to the local markets. Sure the curries have been sitting out by the side of a dirt road all day. Yes there are flies swarming around the dishes playing an endless game of hopscotch between varieties.
